Avocado-Lemon Corn Salsa
- 1 cup Fresh or frozen corn kernels
- 2 Avocados small to medium, peeled, seeded and finely diced
- 2-3 tablespoons Lime juice
- 1/2 teaspoon Lemon juice
- 2 Tomatoes
- 1/2 - 1 teaspoon Green chili peppers minced
- 1/4 cup Cilantro diced
- 1/2 teaspoon Salt
- In a medium bowl, gently combine avocado, corn kernels, tomatoes, lime juice, cilantro, chili peppers, and salt. Cover and refrigerate until ready to be served.
