Ingredients

Blood Orange Chocolate Cake

  • 3 blood oranges zest & juice
  • 1/2 cup olive oil
  • 1 1/2 cups all purpose flour
  • 2/3 cup dark cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups sugar
  • 1 cup water
  • 1 1/2 teaspoons white vinegar

Chocolate Blood Orange Frosting

  • 4 cups pitted dates
  • 2 blood oranges zest only
  • 1/2 cup cacao powder
  • 1/2 teaspoon sea salt
  • 1 cup almond milk

Instructions

Cake:

  • Soak the dates for the frosting in warm water while you are baking the cake.
  • Add the olive oil and blood orange zest to a bowl, and let the flavors combine for about 1 hour.
  • Preheat the oven to 350˚F, and prepare an 8” x 8” or 9” x 9” cake pan by lightly greasing and lining with parchment paper.
  • Measure the dry ingredients – flour, cocoa, baking soda, salt – into a large mixing bowl. Stir to sift together.
  • Add the sugar, blood orange-olive oil, water, vinegar, and blood orange juice (which should be 1/2 cup) into another bowl. Beat until combined.
  • Add the wet ingredients to the dry ingredients, and beat until smooth.
  • Pour the batter in the pan and bake for 30 to 40 minutes. A toothpick inserted in the center should come out clean.
  • When the cake is done, let it cool for about 10 minutes before removing it from the cake pan. Allow it to cool on a wire wrack for about another 20 to 30 minutes before frosting.

Frosting:

  • Combine the dates, cocoa, salt, and blood orange zest in a food processor.
  • Pulse to break up the dates.
  • Add the milk in a drizzle, processing until the frosting is smooth, with a silky texture. Use a spatula to push it down from the sides if necessary.
