
Blood Orange Chocolate Cake
Rich, ruby red blood orange and chocolate – what a deliciously flavorful combination. Put them together in a cake and it’s heavenly. This makes a perfect birthday cake, and you don’t even need to tell people that’s it’s all vegan unless you want to.
Ingredients
Blood Orange Chocolate Cake
- 3 blood oranges zest & juice
- 1/2 cup olive oil
- 1 1/2 cups all purpose flour
- 2/3 cup dark cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon kosher salt
- 1 1/4 cups sugar
- 1 cup water
- 1 1/2 teaspoons white vinegar
Chocolate Blood Orange Frosting
- 4 cups pitted dates
- 2 blood oranges zest only
- 1/2 cup cacao powder
- 1/2 teaspoon sea salt
- 1 cup almond milk
Instructions
Cake:
- Soak the dates for the frosting in warm water while you are baking the cake.
- Add the olive oil and blood orange zest to a bowl, and let the flavors combine for about 1 hour.
- Preheat the oven to 350˚F, and prepare an 8” x 8” or 9” x 9” cake pan by lightly greasing and lining with parchment paper.
- Measure the dry ingredients – flour, cocoa, baking soda, salt – into a large mixing bowl. Stir to sift together.
- Add the sugar, blood orange-olive oil, water, vinegar, and blood orange juice (which should be 1/2 cup) into another bowl. Beat until combined.
- Add the wet ingredients to the dry ingredients, and beat until smooth.
- Pour the batter in the pan and bake for 30 to 40 minutes. A toothpick inserted in the center should come out clean.
- When the cake is done, let it cool for about 10 minutes before removing it from the cake pan. Allow it to cool on a wire wrack for about another 20 to 30 minutes before frosting.
Frosting:
- Combine the dates, cocoa, salt, and blood orange zest in a food processor.
- Pulse to break up the dates.
- Add the milk in a drizzle, processing until the frosting is smooth, with a silky texture. Use a spatula to push it down from the sides if necessary.
