Frozen Lemons & How To Use Them

Freezing lemons is easy and very useful. The process of freezing preserves all of the nutritional goodness in your lemons, and they come in handy for everything from cocktails to livening up everyday dinners.

  • Wash the lemon thoroughly with a pure soap or fruit & vegetable wash. You can also soak them in baking soda and water for about 5 minutes.

Method #1:

  • This is ideal for using whole lemons strictly for juice.
  • Zest the lemon before you freeze it, saving the zest for baking, salads, and sauces.
  • Wrap the whole lemon in plastic wrap or foil.
  • Place whole lemons in individual freezer bags, squeezing out as much of the air as possible before you seal it.
  • To Unthaw:
  • Microwave for 5 seconds or so, or run them under cold water for about 10 to 15 minutes.
  • Slice in half, and squeeze out the juice.

Method #2:

  • This method saves lemon wedges for future drinks.
  • Cut lemon into wedges – do not grate the zest first, leaving it intact.
  • Place lemon wedges on a baking sheet that you’ve lined with parchment paper. Place the baking sheet in the freezer for 1 hour or so until all the pieces are frozen.
  • You can now put the frozen wedges into a ziplock freezer bag, taking out as much of the air as you can before sealing.
  • These can be popped frozen into a drink for an instant kick.

Method #3:

  • This method gives you lemon slices you can use in baking, or in a punch bowl or pitcher of iced tea.
  • Slice lemons and place each slice in a section of an aluminum muffin tin, twisting them into whatever shape you like.
  • You can also add a bit of water to make them into lemon ice cubes.
  • Once they are frozen, you can toss them into a ziplock freezer bag.

Method #4:

  • For quick-use juice cubes.
  • Juice the lemons, and freeze the juice in ice cube trays. If you want to have precise measurements, then first melt a regular ice cube to determine the volume – 1 or 2 tablespoons, usually. That way, when you need a specific amount for a recipe, you’ll know exactly how many cubes to thaw.
  • For flavored cubes, you can also add a mint leaf, bit of rosemary, a blueberry or raspberry along with the lemon juice.
  • Once the cubes are frozen, remove from the tray and store in a ziplock freezer bag until ready to use.

Method #5:

  • This gives you an easy to use lemon fix you can throw into any recipe.
  • Freeze lemons whole.
  • Once they are completely frozen, grate them in their entirety – even the seeds.
  • Place the grated bits into ice cube trays and freeze.
