
Meyer Lemon Cake Bars With Cream Cheese Frosting
Treat yourself to these luscious cake bars, lit up with the fragrant taste of Meyer lemons with just a touch of cinnamon. They're topped with a smooth cream cheese frosting that adds to the lemony goodness. You can serve them to family and friends too...if you want.
Ingredients
Cake Bars:
- 1 cup Unsalted butter softened
- 1 cup granulated sugar
- 1/2 cup golden brown sugar
- 4 Eggs
- 1 Meyer lemon zest & juice
- 1 1/2 cup All purpose flour
- 1/2 teaspoon Baking powder
- 1/8 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1/2 teaspoon cinnamon dried
Cream Cheese Frosting:
- 1/2 cup Unsalted butter room temperature
- 6 ounces cream cheese room temperature
- 1 Meyer lemon zest & juice
- 3 cups powdered sugar
Instructions
- Preheat the oven to 350 F, and prepare a 9" x 9" baking pan by lightly greasing.
- Beat the butter and sugar together with a whisk until the mixture has a light and fluffy texture.
- Add the eggs one at a time, beating constantly as you do.
- Stir in the lemon juice and zest until just combined.
- In a separate bowl, measure the flour, baking powder, baking soda, salt, and cinnamon. Sift it together to blend well.
- Spoon half the dry mixture into the lemon/egg mixture, and fold together. Repeat with the second half.
- Transfer the batter into the prepared baking pan, and bake for about 30 minutes. The cake bars should be golden brown around the edges, and firm in the middle.
- Allow the cake bars to cool for about 30 minutes as you make the frosting.
Frosting
- Beat the butter, cream cheese, lemon zest and juice together until well blended. The texture should be smooth.
- Add the sugar, beating until the frosting is light and fluffy.
- Spread the frosting over the cake and cut into bars.
