Cake:
  1. Soak the dates for the frosting in warm water while you are baking the cake.
  2. Add the olive oil and blood orange zest to a bowl, and let the flavors combine for about 1 hour.
  3. Preheat the oven to 350˚F, and prepare an 8” x 8” or 9” x 9” cake pan by lightly greasing and lining with parchment paper.
  4. Measure the dry ingredients – flour, cocoa, baking soda, salt – into a large mixing bowl. Stir to sift together.
  5. Add the sugar, blood orange-olive oil, water, vinegar, and blood orange juice (which should be 1/2 cup) into another bowl. Beat until combined.
  6. Add the wet ingredients to the dry ingredients, and beat until smooth.
  7. Pour the batter in the pan and bake for 30 to 40 minutes. A toothpick inserted in the center should come out clean.
  8. When the cake is done, let it cool for about 10 minutes before removing it from the cake pan. Allow it to cool on a wire wrack for about another 20 to 30 minutes before frosting.
Frosting:
  1. Combine the dates, cocoa, salt, and blood orange zest in a food processor.
  2. Pulse to break up the dates.
  3. Add the milk in a drizzle, processing until the frosting is smooth, with a silky texture. Use a spatula to push it down from the sides if necessary.
