Next time you have friends over, or you’re looking for a new taste sensation on movie night at home, try this rich, creamy dip. Luscious feta cheese gets a charge of lemon and garlic to add zest. Serve it with toasted or grilled slices of baguette or pita bread, and enjoy.
1/2 lb feta cheese, crumbled
1 1/2 tablespoons extra virgin olive oil
1 teaspoon lemon rind, finely grated
2 tablespoons freshly squeezed lemon juice
1 garlic clove, crushed
Pinch of red chili flakes
- Add feta cheese, 1 tablespoon olive oil, lemon rind and juice, and garlic to a food processor.
- Process until smooth.
- Spoon into a bowl or serving dish and refrigerate, covered, until ready to serve.
- Add remaining 1/2 tablespoon olive oil and red chili flakes just before serving.
