  1. Add the cheeses and butter to a large bowl. Beat together until the mixture is smooth.
  2. Stir in the basil, garlic, lemon juice and zest into the cheese mixture. Blend thoroughly.
  3. Flavor to taste with kosher salt and pepper.
Method #1
  1. Divide the mixture into two, and roll each into a ball.
  2. Place into a bowl and cover.
  3. Combine the dried cranberries and toasted pistachios on a baking dish, distributing each fairly evenly.
  4. Roll the cheese balls in the cranberry/pistachio mixture.
  5. Cover and refrigerate for at least 4 hours.
  6. Serve with crackers, bread, or crisp bread.
Method #2
  1. Using a tablespoon, form the cheese mixture into small balls.
  2. Combine the dried cranberries and toasted pistachios on a baking dish, distributing each fairly evenly.
  3. Roll the cheese balls in the cranberry/pistachio mixture.
  4. Cover and refrigerate for at least 2 hours.
  5. Arrange individual cheese balls on a platter and skewer each with a toothpick. Serve with crackers, bread, or crisp bread.
