  1. Melt the butter in a large saucepan then add the chopped onions, thyme, lemon zest and ginger. Saute for 5 minutes, stirring occasionally.
  2. Add the parsnips, cover and simmer for about 10 minutes. The parsnips should be softened.
  3. Add the chicken stock and lemon juice, cover, and continue to simmer on a low setting for 20 to 25 minutes. The parsnips should be very soft.
  4. Liquidize the soup in batches.
  5. Garnish with fresh parsley and serve warm.
